Citrus Quinoa Salad

This is a delicious recipe from a friend of a friend - and my new favorite way to eat quinoa!

Prepare Quinoa:
Rinse and drain 1 cup quinoa.
Bring quinoa to boil in 2 cups salted water in medium saucepan.
Reduce heat, cover and simmer for +/- 15 minutes (water should be absorbed and quinoa tender).
Remove from heat, fluff w/ fork – cool to room temp and transfer to large bowl or container.

Add:
½ sweet red pepper, finely chopped
1 orange, cut into segments
1 grapefruit, cut into segments
¼ cup dried cranberries
¼ cup feta cheese, crumbled/cubed
¼ red onion, thinly sliced
Handful of fresh chopped cilantro
¼ cup lightly toasted pistachios/slivered almonds/pine nuts

Add Dressing:
1 Tbsp olive oil/ apple cidar vinegar is very flavourful
2 Tbsp orange juice
1 Tbsp rice vinegar

Salt and pepper to taste.
Cover and chill until ready to serve.
Variations:
Add chopped apple and curry powder
